Why a capsule

Honey has one flaw. We fixed it.

No sticky jar

The shell keeps the honey exactly where it belongs until it reaches your cup. Nothing drips down the side, nothing dries on the counter.

Made by the oldest kept bee on earth

The Melipona is a stingless bee the Maya have kept for more than a thousand years, the oldest bee species people have ever managed. Colonies are tiny and give a fraction of what a normal hive does, which is why this honey has always been treated as something rare. It is thinner than you expect, bright and gently tart.

A honey with a three-week window

Lemon trees flower for barely three weeks in spring, so hives have to be standing in the grove at exactly the right moment or the harvest is gone for a year. What comes back is pale, perfumed like the blossom itself, and finishes with a clean twist of citrus peel.

The one that refuses to set

Black locust honey from the forests of Romania, Hungary and Bulgaria. It carries more fructose than most honeys, so it stays liquid and clear for far longer instead of turning grainy in the jar, which is exactly what a capsule needs. Mild, almost colourless, and the easy one to start with.

Two students and a sticky spoon.

Leonard Minjauw and Nathan Soreyn started Honey-Z as a student company in Bruges. The idea was small and stubborn. Honey beats sugar on almost every count except one: it makes a mess of everything it touches.

So they sealed it. Every jar since has been filled by hand, in small batches, in the same city where the first one was.
